
It has taken me far too long to write about Los Jimenez, a food truck I’ve been visiting for years. With all the changes around campus and after the pandemic, many of the food trucks around here have come and gone or changed dramatically, but Los Jimenez has been a mainstay. I especially enjoy that they always have specials going on beyond their regular offerings, so there is always a chance to try something new. One of these days I’ll be in the mood for tamales before they have sold out of them!
I’ve made many visits to this food truck, but on my first visit I tried the Al Pastor tacos, my litmus test for how good a Mexican place can be. I was blown away by the spice and flavor of these delicious tender pork tacos, roasted on a spit behind the friendly man who took my order. Served with a slice of fresh pineapple and a side of salsa verde, these tacos hit the spot!

On another visit, I opted to try the Campechanos quesadilla. This is a mixture of chorizo (a spicy pork sausage) and the al pastor. I was so stuffed from eating just two pieces of the quesadilla, I had enough food to have lunch the next day! It also came with a small salad of lettuce, tomatoes, and radishes.

I had planned to switch it up from the pork dishes I had tried so far, and was hungry for tamales when I found out they had sold out, so I instead ordered the California Burrito, an item from their specials board. This burrito was enormous, filled with rice, beans, french fries, guacamole, and tender strips of steak. I liked this one, but wished the french fries were a little crispier. The flavor was excellent!


My next visit, a seasonal item from the specials board caught my eye. A Butternut Squash Quesadilla with onion, garlic, sage, poblano peppers, and brussel sprouts, served with sour cream, queso fresco, and scallions. It was a crisp autumn day and I love all those ingredients, so I gave it a try. It was amazing so it’s nice to know even my vegetarian friends have some great options here.

There are still so many things on this packed menu that I need to try, but it will be a while before I get to them all. They even have a breakfast burrito for those mornings when the Bagel Hut just ain’t cuttin’ it.
