
Royal Zarasa is a labor of love launched by Terrance and Tiffany Hopkins-Bey in February 2018 as a means to share Tiffany’s love of comfort food. With dishes like BBQ brisket, shrimp & grits, chicken & waffles, salmon slaw sandwiches, and chicken wings, Royal Zarasa’s southern inspired menu made it hard to decide on what to have for dinner as we visited Love City Brewing.
My husband, however, did not have a hard time deciding after taking one look at the menu. He must be on some kind of chicken & waffles kick because he immediately chose it. After much thought, I chose the BBQ brisket sandwich and opted for an order of the Loaded Steak Fries to split.

I was first in line and by the time I ordered beers at the bar and returned to the truck, my piping hot food was ready and waiting. The fries were piled with a generous portion of steak bits and drizzled with cheese sauce, sour cream, and sriracha sauce. The brisket sandwich was lightly tossed in barbecue sauce and topped with a crispy fresh slaw. Of the two items, I enjoyed the brisket sandwich the most. The meat was tender and the slaw was refreshing and light.
BBQ Brisket Sandwich Loaded Steak Fries
I was able to sneak in a bite of my husband’s chicken and waffles (which I would have ordered if he didn’t call dibs!) and they were also delicious. Two pieces of crispy breaded chicken breast sat atop the golden brown waffle with crunchy edges and pillowy soft inside. Overall, this dish was a success although both of us would have liked a tad more maple syrup.
For vegetarians, they have a couple of options including a Vegetarian “rib” sandwich, using seitan for the “meat.” They also have a veggie version of the loaded fries.
